Triple Berry Crisp

Happy 4th of July!!

When I got married and we bought our first house in Seattle, we spent a solid 3-4 months gutting and remodeling it. Our kitchen was down to the studs, the refrigerator lived in our living room (it started to feel like part of the family), and we ate a plethora of Chinese takeout and pizza. It was fun, but by the time we had our kitchen finished, I was SO excited to cook and entertain!

I found this recipe somewhere during our remodel (reading cookbooks and cooking magazines is still one of my favorite things to do!) and made it the very week our kitchen was done. Which then turned into making it a couple times a week, ha. It was almost as easy as my favorite boxed brownies or chocolate chip cookies, but felt more summery and light. I've modified it a bit over the years, and it's still my favorite dessert to serve and it looks so pretty too. Guys (my husband especially) like it too because it's just the perfect balance of a little tart and not too sweet. 

Start with frozen raspberries, blueberries and blackberries...

I like to use frozen berries (my fave is this one) because I find they come out perfectly cooked without having to be thawed beforehand. But you can use fresh berries too, just decrease the cook time and be careful when stirring them.

Mix in the brown sugar, flour, lemon juice combo... 

Butter a 14x9 dish and pour the coated berries in and set aside.

Now make that yummy topping! 

Use the side of the spatula to cut in the softened butter, then pour evenly on top of the berries.

Cook for 50 min or until all the berries are bubbly and the topping is golden brown! YUM!

Let it cool for 15 minutes, the hardest part obviously. 

Don't forget to top with your favorite vanilla ice cream and some fresh blueberries and raspberries!

 

TRIPLE BERRY CRISP RECIPE

6 cups frozen berries (raspberries, blueberries, and blackberries)- do not thaw!

2 tablespoons brown sugar

1 tablespoon all-purpose flour

1 tablespoon fresh lemon juice 

1 cup all-purpose flour

3/4 cup packed brown sugar

3/4 cup regular oats

1 teaspoon cinnamon 

7 tablespoons butter, softened

Vanilla Ice Cream :)

 DIRECTIONS

1.  Preheat oven to 400 degrees.

2.  Combine first 4 ingredients in a bowl, and spoon into a lightly greased (use butter) 14X9 baking dish.

3.  Combine the remaining ingredients for the topping, and using a knife or the side of a spatula cut in butter until the mixture resembles course meal (see photo). 

4.  Bake at 400 degrees for 50 min or until fruit is bubbly and topping is golden brown and crispy!

Top with vanilla ice cream, fresh raspberries and blueberries for a festive feel. :)
