I'm not a vegetarian or anything, but sometimes meat makes me feel kinda sluggish, so I always like to lighten up with vegetarian or vegan options when my body is feeling this way. I try to eat gluten (or grain) free and dairy free 90% of the time because I just feel better avoiding that stuff, so I chose the yummy GF buns from Trader Joe's for these burgers (but I also really love them lettuce wrapped too!), and my fave DF mayo is Primal Kitchen's Avocado Mayo. These are pretty light and great if you want to be full but not stuffed, haha, and really good served with Siete Sea Salt Grain Free Tortilla Chips, potato chips if that's more your thing, or homemade sweet potato fries. And of course some dill pickle spears. :)

Black Bean Burgers with Spicy Cucumber and Red Pepper Relish (makes 4)
Relish (make and chill for a couple hours before serving):
-2/3 cup finely chopped peeled cucumber
-1/2 cup finely chopped red pepper
-1/4 cup finely chopped red onion
-1 tablespoon fresh lime juice
-1 tablespoon chopped dill
-1/8 teaspoon salt
Dash of ground red pepper
Burgers:
1 (15 oz can black beans, rinsed and drained)
-1/2 cup GF dry bread crumbs
-1/4 cup minced red onion
-1/2 teaspoon dried oregano
-1/4 teaspoon ground cumin
-1/8 teaspoon black pepper
-1 large egg
-4 burger buns
-Avocado, baby arugula, and DF mayo (for serving burgers)
To prepare burgers, place beans in a large bowl and partially mash with a fork. Stir in the ingredients well and divide into 4 equal portions, shaping each into a 1/2" thick patty. Spray BBQ or cast iron grill pan with nonstick cooking spray and grill for about 5 minutes on both sides, on medium high.
Layer with relish, avocado slices, arugula, and mayo! Yum!
